Rhubarb

Rhubarb is a common household crop in the far south: it withstands cold, grows in gardens and produces acidic stalks cooked with sugar. It is a settler tradition rather than a native product.

Its culinary interest lies in acidity, which balances fatty dishes such as lamb.
