Why king crab goes to China, and what that means for the local table

Seven buyers take almost everything and export it. That is where the two things felt in the city come from: that there is barely anywhere to buy it, and that it is expensive.

It is a fair question from anyone cooking in Magallanes: if king crab is fished here, why is buying it here not cheaper? The answer does not lie in a tax benefit gastronomy lacks. It lies in who the other buyer is.

According to ProChile, in the first eight months of 2025 Magallanes king crab exported US$23 million, 30% more than the same period the previous year, with China taking all shipments. That is the buyer a Punta Arenas restaurant competes with: not another restaurant, but a market that pays in foreign currency and takes containers.

The price is not set in Punta Arenas

When a resource’s main destination is export, the reference price stops being local. A king crab dish in Magallanes does not compete against other dishes in the city: it competes against what that same animal fetches delivered in China. The restaurant is not paying an arbitrary mark-up; it is paying the exporter’s opportunity cost.

What we looked for and did not find

We looked for a legal instrument granting regional gastronomy preferential access to the resource — a domestic-consumption quota, a concession, a regulated price for local sale — and did not find one in the public sources we reviewed. That does not prove none exists: it proves it is not published where it would be if it did. If anyone has it, we will publish it with its source.

This is why there is barely anywhere to buy it

The scarcity of formal points of sale is not an impression: it follows from the structure of the market. In its complaint, the National Economic Prosecutor states that seven processing companies acquired, between 2017 and 2021, «between 81% and 88% of the live king crab caught by the area’s artisanal fishermen», and describes those companies as processing and exporting it «almost in its entirety».

If seven buyers take close to nine of every ten animals landed and send them to export, what remains for the formal local channel is the remainder. It is not a decision by the city’s traders nor a failure of the city: it is what is left after the container is loaded. And on top of that remainder operates an informal channel that does not pay the obligations the formal one does.

And there is no official list of where to buy

Sernapesca asks people to buy «only from established, authorised premises offering king crab in properly labelled packaging». We reviewed its public listings and registries page and found no registry of authorised king crab points of sale or traders: the published listings cover other matters. The authority states a sound criterion without publishing the list that would make it applicable, and the buyer is left relying on the packaging label, the only check within reach.

On the prices in circulation

We do not publish king crab prices, and it is worth explaining why with an example. Listings circulate online with prices per kilo, venue names, addresses and opening hours presented as local information. We checked one of the most visible: it has no author, no date, cites no source, and contained none of the data attributed to it. Until we have verified prices with a date and an origin, this page explains why the price is high, not what it is.

The figure in circulation, and why we do not take it as read

That export takes almost everything is asserted by the prosecutor itself in its complaint, which is why we publish it. The exact 95% usually repeated is another matter: that figure appears in an opinion column published in La Tercera on 31 October 2025, signed by a competition lawyer, with neither methodology nor source. We cite it as attributed to its author, not as a statistic. ProChile’s export figures are official; the exact share of total landings we have not been able to verify.

What is left for the local table

  • Volume: 311 tonnes landed in the 2026 season up to mid-August, with 250 of 420 authorised boats operating.
  • Competition: the industrial buyer purchases to process and export; the restaurant buys single animals.
  • Seasonality: outside the harvest window what is available is frozen, and that carries its own price.

Could gastronomy buy cheaper if it organised?

That is a public-policy question, and this publication will not answer it with an opinion dressed as data. What is documented is that the purchase market for this resource is under accusation of collusion before the Competition Tribunal, and that those who joined the case were the fishermen, not the restaurants.
