Blue mussel

Southern Chilean mussel, the base of broths, rice dishes and preserves.

The mussel is the most accessible mollusc and the most present in austral home cooking. It is eaten fresh, steamed, in broth, and smoked in tins.

Availability depends on the bivalve sanitation programme; during algal bloom events harvesting is suspended by area.
