Scallop

A sweet, firm-fleshed mollusc, served raw, grilled or barely seared.

Scallop tolerates very little cooking. On the austral table it appears raw with citrus, grilled in its shell, or seared for an instant. Quality is judged by the size of the muscle and the presence or absence of the coral.

Like every bivalve, its sale depends on SERNAPESCA sanitation programmes. The harvest area matters as much as freshness.
