Raw and marinated

Seafood served raw or cold-marinated. Requires strict sanitary traceability.

Sea urchin, scallop and part of the austral catch are served raw or barely marinated. This is how the product shows itself without mediation, and also what tolerates the least error.

Bivalve molluscs are subject to harmful algal bloom sanitation programmes. A serious venue knows which harvest area its product comes from.

How to recognise it

  • The kitchen can identify the harvest area.
  • Sanitary certification is available on request.
