Magellanic king crab
The crustacean that defines the Magallanes table. Trapped in the cold waters of the strait and the channels.
King crab is the product most associated with Punta Arenas and also the one most subject to confusion. It is sold whole, as claws, or picked, and is routinely confused with the false king crab (Paralomis granulosa), a different, smaller species at a different price.
Eating whole king crab is a decision about time and money: it needs service, it needs the animal to be available, and it needs a venue working with live or freshly cooked product. Asking whether it is centolla or centollón, and whether it comes whole or picked, is the useful question.
